Breakfast club

I wish I could say that the many lockdowns of 2020 turned me into a domestic goddess with a sparkling clean house and freshly baked goods spilling out of the oven every day. It did not. I, like many people, spent a lot of time in my pyjamas, working too many hours, and watching too much TV. But, I have managed to get in the kitchen for the last couple of weekends, and one of my first adventures of 2021 is homemade granola!

This is a recipe from The Hairy Bikers/Dieters although to be honest, recipe is pushing it a bit far. All you need to do is boil down some apple juice until it’s syrupy, throw in some oats and then bake them for a bit. After that mix in whatever dried fruit you have to hand et voila! This batch has apricots, cranberries and raisins with a few flaked almonds for good measure.

Super simple, and I’m really growing to love making things at home that I would otherwise usually buy. That bit more control over what you’re putting into your bowls and plates is always a plus.
